Polenta

Polenta is a versatile cornmeal made from ground corn. It has a mild, slightly sweet flavour and can be served creamy, baked, grilled, or fried, making it an excellent accompaniment to a wide variety of dishes.

Store dry polenta in an airtight container in a cool, dry place away from heat, moisture, and direct sunlight. Once cooked, refrigerate in a sealed container and use within 3–4 days.

• ¼ cup (40–45 g) dry polenta per person as a side dish.

• Cook with approximately 1 cup (240 ml) of water or stock per ¼ cup of dry polenta (or follow the package instructions).

• Stir continuously while cooking until smooth and creamy.
